We’re very excited to announce our plans for National Potato Day which is taking place on Friday 6th October. National Potato Day is an annual event where we can celebrate potatoes as a nation and enjoy some wonderful potato recipes; which we have plenty of right here on potato.ie!

This year our theme is ‘Potatoes: What’s Under The Skin’ which will find us focusing on the health benefits of our most popular and widely used vegetable. We’ll be sharing our favourite healthy recipes from our site.

So, why are we looking at potatoes and health this year? Well, potatoes are associated with fast food like chips and snacks like crisps, however, in their raw form they are a nutritional powerhouse with a tonne of benefits. These benefits will be highlighted in a piece from dietician Aoife Hearne who will dive into how carbohydrates are an essential energy source for our normal bodily functions and brain functions. Hearne advocates potatoes as a quality, fat-free and gluten-free carb.

You can enjoy over 120 scrumptious potato recipes right here on potato.ie. Here is a range of recipes inspired by international cuisine – all incredibly easy to prepare and healthy!
