Ingredients for 4

  • 4 large floury potatoes (e.g. Rooster) (approximately 1 kg)
  • Butter, at room temperature
  • 1 garlic clove, peeled and chopped
  • Chopped parsley

Topping with cottage cheese and ham

  • 4 slices of cooked ham
  • 200g cottage cheese
  • 3 scallions
  • 6 radishes
  • Salt and freshly ground black pepper

Cooking time: 50 MIN
  1. Preheat the oven to Gas Mark 6, 200°C (400°F).
  2. Rinse the potatoes and immediately sprinkle with salt, this will give them a crispy crust later on.
  3. Pierce the potatoes with a knife and place them in a greased ovenproof dish. Cook them in the oven for 40 to 50 minutes, depending on the size.
  4. Mix the butter with the chopped garlic and parsley.
  5. Remove the potatoes from the oven and cut them in half, but not all the way through. Fill with the herb butter.

For the topping:

  1. Trim the scallions and radishes and cut into thin diagonal slices.
  2. Cut the ham into strips.
  3. Stir the cottage cheese and season with salt and pepper. Mix in the vegetables together with the cooked ham.
  4. Spoon over the topping and serve immediately
