  • 700 g baby/salad potatoes
  • 80 g finely grated parmesan cheese
  • Olive oil
  • Salt and pepper
  • 1 tbsp dried chives
  • Few sprigs fresh thyme

  1. Preheat the oven to 180°C.
  2. Cut the small potatoes in half and place in a bowl. Drizzle some olive oil over and season with salt, pepper, dried chives and thyme leaves. Toss together until all potatoes are covered with olive oil.
  3. Take a baking tray and cover with baking paper. Add some olive oil and sprinkle the grated parmesan cheese on top. Place the potatoes with the cut side down on the parmesan cheese and place in the oven for 25-30 minutes until crispy.
  4. Serve immediately as a side dish with some extra baked veggies, meat, fish or a salad.
