Ingredients for 4

  • 2-3 large potatoes (e.g. Rooster potatoes) (approximately 200 g)
  • 3–4tbsp vegetable oil (or coconut oil)
  • 450 g turkey mince
  • 1 onion, chopped
  • 1–2 fresh red and green chillies , chopped
  • Piece of ginger, peeled and finely grated
  • 2 cloves of garlic, crushed
  • 1 tbsp garam masala (or curry powder)
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 125 ml water
  • 4 plum tomatoes, diced
  • 135g mushrooms, sliced (mix of white and brown mushrooms)
  • 60 g parsley
  • Salt and pepper (seasoning)

Preparation time: 20 MIN Cooking time: 30 MIN
  1. Chop the potatoes into chunks.
  2. Heat the oil in a pot (with a lid) over a medium-high heat.
  3. When hot, add the turkey mince, spreading evenly and cook until brown. Season with salt and pepper.
  4. Add the potatoes, the water, the diced tomatoes and mushrooms, the onion and chillies. Add some salt, the grated ginger, and garlic. Stir to combine everything and cover with a lid.
  5. Turn the heat down to medium-low and simmer for 15–20 minutes until the potatoes are tender.
  6. Garnish with some parsley.
  7. Ready to serve.
