Ingredients for 4

  • 3 potatoes, cut into 2cm pieces (e.g. Rooster potatoes) (approximately 375 g)
  • 15 g butter
  • 500 g (frozen) mixed vegetables (carrot, onion, celery, leek)
  • 175 ml chicken stock
  • 300 ml semi-skimmed milk
  • 198 g tin sweetcorn, drained
  • 375 g smoked haddock cut into 2.5 cm pieces

Cooking time: 25 MIN
  1. Melt the butter in a large saucepan
  2. Add the mixed vegetables, stock, and milk, bring to the boil.
  3. Add the potatoes and simmer for 10 minutes.
  4. Add the sweetcorn and haddock and cook for a further 5 minutes
  5. Season to taste.
  6. Ladle into 4 bowls and top with cheese.
