POTATO RACLETTE WITH BLUE CHEESE

Ingredients for 4

  • 4 large floury potatoes (e.g. Rooster) (approximately 1 kg) for steaming/baking
  • 4 slices of ham (approximately 120g)
  • 4 rashers of bacon (approximately 40g)
  • 700g of blue cheese
  • Lettuce
  • Salt and freshly ground black pepper

Find all the warmth and happiness of time spent at the table with a raclette evening with a twist. Gone are the traditional raclette cheeses, make way for the powerful flavour of blue cheese to reveal the sweetness and delicacy of the potato.

  1. Wash the potatoes.
  2. Cook them with the skin on, starting the cooking process in cold salted water to ensure perfect shape through cooking.
  3. Cook for 20 to 25 minutes depending on the size of the potatoes. To check whether they are cooked, prick the potatoes with the tip of a knife. If the knife comes out easily, the potatoes are cooked, otherwise cook for a few more minutes.
  4. Serve the potatoes with ham, grilled bacon, lettuce and melted cheese. Season with salt and pepper.
