BAKED POTATO WITH CARAMELISED RED ONION , BACON AND CHEDDAR CHEESE

Ingredients for 4

  • 4-5 baking potatoes (e.g. Rooster potatoes) (approximately 400 g)
  • 1 tbsp olive oil

Filling:

  • 100 g smoked streaky bacon
  • 80 g Cheddar cheese, grated on top
  • 2 sliced red onion
  • 2 sprigs of thyme
  • 40 g baby spinach leaves
  • 4 tbsp natural yoghurt
  • Sea salt

Preparation time: 10 MIN Cooking time: 70 MIN
  1. Preheat the oven to 200°C/Gas 6.
  2. Wash and scrub the potatoes and dry with a clean tea towel. Rub with olive oil and season with sea salt, then use a fork to pierce the potato multiple times.
  3. Place on a baking tray and bake for 50 minutes - 1 hour until the potato is crispy on the outside and soft on the inside.
  4. Transfer to a chopping board and slice down the middle.
  5. Sprinkle the grated cheese on top and return to the oven for 5 minutes until melted. Top with the filling.

Filling

  1. Chop the smoked streaky bacon and fry with thinly sliced red onion and several fresh sprigs of thyme.
  2. Add the cooked filling to the melted cheese on the baked potato.
  3. Top with a handful of baby spinach leaves and add a spoonful of natural yoghurt.
  4. Ready to serve
