OVEN BAKED POTATO CHIPS WITH TURKEY CHILLI

4 floury potatoes (e.g. Rooster) (approximately 500g) 1 teasp. rapeseed or olive oil 1 tablesp. chilli flakes 1 tablesp. paprika 2 garlic cloves, peeled and chopped 150g of lean minced turkey Pinch of Himalayan pink salt 3 fresh tomatoes, chopped Coriander Pink sauce – mix ketchup and light mayo together (optional) Grated cheese

Preheat the oven to Gas Mark 4, 180°C (350°F) Clean the potatoes and cut them into chips, drizzle in oil and place on a tray to cook. Season the potatoes with chilli and paprika. To make the taco mince, fry the garlic in oil in a pan over a medium heat. Add the mince and cook till browned. Season with salt. Add the tomatoes and coriander. Check seasoning – if you would like it a little spicier add a little more chilli powder. To serve, place the chips on a plate, top with the mince, add a little pink sauce and finish with some grated cheese.
