Ingredients for 4

  • 500g Rooster potatoes
  • 1 block feta (150g)
  • 250g cherry tomatoes on vine
  • 1 red onion
  • 2 cloves of garlic
  • 1 tsp smoked paprika
  • ½ tsp chilli flakes
  • Handful of fresh basil
  • Salt and pepper
  • Olive oil

Preparation time: 40 MIN Cooking time: 30-35 MIN
  1. Preheat the oven to 200°C. Cut the Rooster potatoes into small cubes. Arrange in a large oven dish lined with baking paper. Drizzle with olive oil and season with salt and pepper. Place in the oven for 20 minutes or until light brown.
  2. Meanwhile, slice the red onion and crush the clove of garlic.
  3. Remove the potatoes from the oven. Add the block of feta into the middle of the potatoes. Place the cherry tomatoes on the vine, red onion, and garlic around the block of feta. Drizzle with olive oil and season with salt, pepper, smoked paprika and chili flakes. Place back in the oven for 10-15 more minutes.
  4. Remove the tray from the oven and remove the tomato vine. Using a fork, roughly mash the feta and tomatoes together, to create a sauce. Combine carefully with the potatoes and red onion. Garnish with chopped, fresh basil. Serve immediately.
