POTATO, SALMON AND LEEK SOUP

- 7 potatoes, cut into chunks (e.g. Rooster potatoes) (approximately 1 kg)
- large knob butter
- 2 large leeks, finely sliced
- 1 bay leaf
- 1l chicken stock
- 100 ml double cream
- 200 g smoked salmon or salmon steaks
- small bunch chives

- Peel and cut the potatoes into medium-sized chunks then par-boil them for 15 minutes.
- Heat the butter in a saucepan and add the leeks and bay leaf. Cook on a low heat for 8-10 minutes or until leek is soft.
- Transfer the potatoes to the soup mix.
- Gently simmer for 10-15 minutes until the potatoes are tender.
- Add two thirds of the salmon, stir through and season.
- Serve in a deep bowl with the remaining salmon and chives, enjoy!
