POTATO, SALMON AND LEEK SOUP
Ingredients for 4
7 potatoes, cut into chunks (e.g. Rooster potatoes) (approximately 1 kg)
large knob butter
2 large leeks, finely sliced
1 bay leaf
1l chicken stock
100 ml double cream
200 g smoked salmon or salmon steaks
small bunch chives

POTATO, SALMON AND LEEK SOUP
Cooking time:
40 MIN
Peel and cut the potatoes into medium-sized chunks then par-boil them for 15 minutes.
Heat the butter in a saucepan and add the leeks and bay leaf. Cook on a low heat for 8-10 minutes or until leek is soft.
Transfer the potatoes to the soup mix.
Gently simmer for 10-15 minutes until the potatoes are tender.
Add two thirds of the salmon, stir through and season.
Serve in a deep bowl with the remaining salmon and chives, enjoy!
