Ingredients for 4

  • 7 potatoes, cut into chunks (e.g. Rooster potatoes) (approximately 1 kg)
  • large knob butter
  • 2 large leeks, finely sliced
  • 1 bay leaf
  • 1l chicken stock
  • 100 ml double cream
  • 200 g smoked salmon or salmon steaks
  • small bunch chives

Cooking time: 40 MIN
  1. Peel and cut the potatoes into medium-sized chunks then par-boil them for 15 minutes.
  2. Heat the butter in a saucepan and add the leeks and bay leaf. Cook on a low heat for 8-10 minutes or until leek is soft.
  3. Transfer the potatoes to the soup mix.
  4. Gently simmer for 10-15 minutes until the potatoes are tender.
  5. Add two thirds of the salmon, stir through and season.
  6. Serve in a deep bowl with the remaining salmon and chives, enjoy!
