Ingredients for 4

  • 2 potatoes, mashed (e.g. Rooster potatoes) (approximately 400 g)
  • 150 g carrots
  • 100 g bacon
  • 1 onion
  • 2 eggs
  • olive oil
  • 150 g breadcrumbs
  • frying oil
  • salt and pepper
  • To serve: mayonnaise
Cooking time: 80 MIN
  1. Peel and wash the potatoes and carrots. Boil them for about 15-20 minutes once the water comes to the boil, the vegetables should be tender. Drain.
  2. Mash the potatoes and carrots to obtain a purée. Set aside.
  3. Mince the onion and cut the bacon into strips.
  4. Fry the onion in a hot frying pan, then add the bacon and leave it to cook until it is nicely browned.
  5. Mix the purée with the onions and bacon, add pepper and season if necessary.
  6. Use two spoons to form croquettes. Keep in a cool place.
  7. Beat the eggs in a dish and pour the breadcrumbs onto a plate.
  8. Dip the croquettes in the eggs and then in the breadcrumbs, repeat the operation if necessary.
  9. Fry the croquettes for about 4 minutes in hot oil.
  10. Serve with some mayonnaise
